
Need recipe for a blueberry stack cake.?
I’m looking for a recipe for a blueberry layered cake. It’s a dense cake. Somewhat like a Coffee cake texture. It also has a cream cheese layer between the 2 cake layers. There isn’t any frosting, just powdered sugar on top. Also, it doesn’t use blueberry pie filling. The only blueberries in it are actually in the cake itself. If anyone has a recipe, please pass it along. It would be much appreciated.
BLUEBERRY STACK CAKE
Ingredients:
* 1/4 cup butter, room temperature
* 3/4 cup sugar
* 1 egg
* 2 cups sifted all-purpose flour
* 2 teaspoons baking powder
* 1/2 teaspoon salt
* 1/2 cup milk
* 2 cups fresh or frozen blueberries, rinsed
* .
* Topping :
* 1/4 cup butter, room temperature
* 1/2 cup sugar
* 1/3 cup all-purpose flour
* 1/2 teaspoon ground cinnamon
Preparation:
Cream 1/4 cup butter with 3/4 cup sugar; add egg and beat well. Into a medium bowl sift together 2 cups flour, baking powder, and salt. Add sifted dry ingredients to butter mixture alternately with 1/2 cup milk, beating until smooth. Fold in blueberries. Pour into a greased 9-inch square baking pan. For topping, combine topping ingredients and blend well to form crumbs.
Sprinkle topping crumbs over batter. Bake at 375° for 35 minutes.

Blueberry Pound Cake
This blueberry pound cake is baked in a tube pan.
Cook Time: 1 hour, 15 minutes
Ingredients:
* 1 cup butter softened
* 2 cups sugar
* 4 eggs
* 1 teaspoon vanilla extract
* 3 cups flour divided
* 1/2 teaspoon salt
* 1 teaspoon baking powder
* 1 pint fresh blueberries or 2 c. frozen, thawed
Preparation:
Preheat oven to 325 degrees.
Cream butter and sugar. Add eggs one at a time and beat until light and fluffy. Add vanilla. Sift 2 cups flour, salt and baking powder together. Add sifted ingredients to creamed mixture and beat. Dredge berries in remaining flour. Gently fold floured berries into the batter. Grease and dust a tube pan with confectioners’ sugar or flour; pour batter into it. Bake for 1 hour and 15 minutes, or until it tests done.
