Ethiopia’s coffee ceremony is an integral part of their social and cultural life. An invitation to attend a coffee ceremony is considered a mark of friendship or respect and is an excellent example of Ethiopian hospitality. Performing the ceremony is almost obligatory in the presence of a visitor, whatever the time of day. Don’t be in a hurry though – this special ceremony can take a few hours. So sit back and enjoy because it is most definitely not instant.
A traditional Ethiopian coffee (Bunna) ceremony is highly sensory, immersing guests in the sounds, smells and sights of roasting, grinding, boiling, pouring, and serving coffee. Our younger guests eagerly munched popcorn, served as a snack during the ceremony!
Women usually conduct the ritual and begin by roasting the Coffee Beans in a long handled pan, shaking the beans back and forth continuously until they begin to pop. When the beans are fragrant and slightly blackened, the smoking pan is carried around the room so the guests can appreciate the aroma of the freshly roasted beans.
The beans are ground. and the freshly Ground Coffee put in a traditional clay pot called a Jebena, and water added. At this point, a stick of incense is lit, and left to burn, and mingle with the smell of Brewing Coffee. The boiling coffee is served in tiny china cups (cini). Coffee is offered when visiting friends, during festivities, or as a daily staple of life. If coffee is politely declined then most likely tea (shai) will be served. The coffee is brewed by first roasting the green coffee beans over hot coals in a brazier. Once the beans are roasted each participant is given an opportunity to sample the aromatic smoke by wafting it towards them. This is followed by the grinding of the beans, traditionally in a wooden mortar and pestle. The coffee grounds are then put into a special vessel and boiled. The boiling pot (jebena) is usually made of pottery and has a spherical base, a neck and pouring spout and a handle where the neck connects with the base.
